Well it only makes sense. Jesus did turn water into wine, beer was the obvious next step!

My big question is, if a person is of any religion, and in their religion they use mead or beer to honor their gods. As long as they are not a slave to the substance, are they still edge?

Not saying this is about anyone I know in particular, just asking. I have my idea, what is yours?

they're either in defiance of their religion or they're not alcohol free, so either way there's a dilemma.

What do yu suggest for me to do to have them come to terms with it?

There's been a lot of talk about it on this site. The problem is one of basic logic. god is right and incapable of being judged by man. If man believes that drinking is wrong, then man is judging god and believes that god is wrong. If they don't believe that drinking is wrong, then they aren't straight edge.
